Pre heat the oven to 190C gas mark 5.

Put the potatoes into a large pan and cover with water.
Bring to the boil and simmer for 10-15mins until they
are tender, tip into a colander to drain.
Return to the saucepan, add the milk and butter and
mash until smooth.

Melt
the butter in a saucepan and stir in the flour, then
add the milk and cook, stirring, until thickened.

Add the cubed fish to the sauce and cook gently
for 5 minutes. Season and add the chopped parsley.
5. Transfer into an ovenproof dish, cover with mashed
potato, roughing it up lightly with a fork.

Dot with butter and cook for 30 minutes or until the potato
is lightly browned.
7. Serve with a locally grown vegetable like broccoli,
carrots or
peas.
