Suffolk Fish Pie

 

•

750g Cod fillets skinned and cubed

•250g Smoked haddock fillets skinned and cubed
•1 pint Milk
•50g butter        50g plain flour
•2 tablespoons chopped fresh parsley
•Salt and black pepper
•1kg potatoes peeled and cut into chunks
•Splash of milk and knob of butter to add to mash

Method

•1. Pre heat the oven to 190C gas mark 5.

 

•2. Put the potatoes into a large pan and cover with water.  Bring to the boil and simmer for 10-15mins until they are tender, tip into a colander to drain.  Return to the saucepan, add the milk and butter and mash until smooth.

•

 

3. Melt the butter in a saucepan and stir in the flour, then add the milk and cook, stirring, until thickened.

4. Add the cubed fish to the sauce and cook gently  for 5 minutes.  Season and add the chopped parsley.

5. Transfer into an ovenproof dish, cover with mashed potato, ‘roughing’ it up lightly with a fork.

6. Dot with butter and cook for 30 minutes or until the potato is lightly browned. 

•

 

7. Serve with a locally grown vegetable like broccoli, carrots or peas.
