Christmas Cakes

85g butter

85g soft brown sugar

100g plain flour

340g dried mixed fruit

30g dried cherries             2 eggs beaten

(Will make 4 baked bean can sized cakes)

Method

1. Put on an apron and wash your hands.

2. Preheat the oven to 120C, 230F or gas mark 0.5

3. Line the baked bean cans (never use cans with plastic lining sides or bottom), with  oiled greaseproof paper

4. Cream together butter and sugar in one mixing bowl. Beat in the eggs, a little at a time.

5. Put all the other ingredients into a separate mixing bowl and stir until everything is coated in flour.

6. Stir into the egg mixture.

7. Fill the cans until they are three quarters full and bake for about 90 minutes.

 

To decorate the cakes
 

Ingredients:

200g marzipan

200g ready- roll icing

Icing sugar to dust

Ribbon / cake decorations

 

1.1. Put on an apron and wash your hands

2.2. Divide the marzipan into four pieces, one for each cake.

3.3. Roll it into a ball and flatten it.  Use it to cover the top of the cake.
4.4. Divide the icing into four equal portions and dust the table with icing sugar.  Roll out one piece of icing into a circle that is a little bit bigger then the marzipan.
55. Put the circle of icing on top of one of the cakes.  Work it over the cake so that it covers the marzipan.
6.6. Finish off the cakes with cake decorations on top and a length of ribbon round the middle.  Secure the ribbon with sticky tape
7.7. Place the cakes in a cellophane bag and tie with a ribbon if you want to give them to someone as a gift.
